For the second consecutive year, the WA Good Food Guide has teamed up with the Purple Hands Foundation to offer a distinctive dining experience at Cable Beach Amphitheatre. This special event welcomed over 120 students on the opening night of the Kimberley 9s Carnival, creating an unforgettable evening filled with great food and camaraderie.
The culinary team from Heyder & Shears played a pivotal role in crafting a three-course meal inspired by the Kimberley region. This unique menu was developed with input from students during their nutrition workshops facilitated by Fuel to Play, ensuring that their preferences were reflected in the dining experience. During these workshops, students were encouraged to explore the use of native ingredients, which were beautifully showcased in the final menu featuring local produce.
As the sun set over Broome, the students gathered under a canopy of stars to enjoy a well-deserved meal after an exhilarating day of beach football. This student dining experience was made possible through the collaboration of the Purple Hands Foundation, the WA Good Food Guide, and Heyder & Shears, with heartfelt thanks to several supporting organizations, including Linley Valley Pork and Dirty Clean Food.
The evening’s menu was a culinary journey that began with delightful canapés. Guests were treated to beetroot and feta tartlets, satay lamb skewers, and a variety of other mouthwatering starters. The main course featured an array of dishes, such as Linley Valley Pork belly accompanied by quandong chutney and slow-cooked lamb shoulder paired with smoked eggplant purée. Each dish celebrated local flavors and showcased the best of the region’s ingredients.
To conclude the night, students enjoyed a sweet dessert featuring local ice cream paired with chocolate and popping candy, a delightful ending to a memorable dining experience. This event not only nourished the body but also fostered community spirit among the students, creating lasting memories that will surely be cherished for years to come.
