For the second consecutive year, the WA Good Food Guide has joined forces with the Purple Hands Foundation to present a distinctive dining experience at Cable Beach Amphitheatre, catering to over 120 students attending the Kimberley 9s Carnival. This collaboration showcases a celebration of local culture and cuisine, bringing students together for an evening of culinary delight.
The culinary team at Heyder & Shears played a pivotal role in crafting a three-course meal inspired by the Kimberley region. Drawing on insights gathered from students during their nutrition workshops with Fuel to Play, the menu reflects a thoughtful incorporation of local ingredients and traditional flavors, making the dining experience both meaningful and delicious.
As the sun set after a day filled with beach football and laughter, students had the chance to unwind beneath the stars, savoring the thoughtfully prepared meal. This unique event, which aims to enrich the students’ experience during the carnival, was made possible through the partnership of the Purple Hands Foundation, the WA Good Food Guide, and Heyder & Shears, along with contributions from various local organizations.
Guests were treated to a delightful menu that began with canapés like beetroot and feta tartlets, accompanied by lamb skewers seasoned with satay. The meal continued with inventive starters such as kangaroo tail croquettes and sweet potato taquitos, all crafted to highlight native Australian ingredients. The main courses featured succulent options like Linley Valley Pork belly paired with a quandong chutney and a slow-cooked lamb shoulder served with smoked eggplant purée.
Dessert was a sweet ending to the night, featuring local ice cream topped with chocolate and popping candy, providing a fun and tasty conclusion to a memorable evening. This gathering not only celebrated food but also fostered a sense of community and connection among the students, enriching their experience at the Kimberley 9s Carnival.
